winery cooking class
Some of my favorite days happen inside a Maremma winery.
I run this experience together with one of the estates I work with, Rocca di Frassinello, where the wine and the food come from the very same land.
We start in the kitchen and roll up our sleeves: hands in the flour, making fresh pasta from scratch, the way it’s done here.
Then we head into the cellar for a guided visit through the estate, the barrels, the story behind each bottle.
When the tour is over, we sit down to eat. It begins with a small aperitivo, then four courses of traditional Tuscan cuisine each one paired with a wine from the estate.
